Ingredients

  • 2 Chicken breasts
  • 4 Bamboo skewers
  • 1tbs Cajun spice
  • 2tsp cracked Coriander seeds
  • 150ml Danone NutriDay Vanilla Yoghurt
  • Salt & Pepper to season
  • 1 Whole Lemon
  • 120ml Oil
  • 1 red Pepper

Method

Marinade
  1. Grate lemon skin for the zest
  2. Mix all the spices with the yoghurt
  3. Squeeze in the juice of half a lemon into yoghurt mix & add zest
  4. Leave for at least 4 hours in the fridge
Kebabs 

  1. Slice chicken in cubes
  2. Cut ends of pepper off
  3. Cut pepper into slices
  4. Skewer chicken alternating with the peppers
  5. Coat in oil & grill till golden brown & cooked
